I have read about controlling other Lutron products, but there has been no mention of the Lutron Caseta line? I have the bridge with several switches and was wondering if there is an option to control them via the DemoPad?

Just use a button, but use the Transparent10x10 image in the Free Graphics Set/Buttons directory. That way you will see any text on the button, but the button image itself will be invisible.
